Ingredients:
2 big duck thighs
300g straw mushroom
Ginger, spring onion, white wine (rice wine), Magi’s stuff, sugar
Purple onion, coriander, garlic, annatto seed oil
Making noodle: 2 bowls tapioca starch or cassava starch, salt, hot water
Process:
Step 1: Mix cassava starch + ½ teaspoon salt together.
Ingredients:

Step 1: Mix cassava starch + ½ teaspoon salt together.
Step 2: Pour slowly hot water into this mixture. Do not stop stirring when pouring water. Use your hands to knead until it become a soft and smooth block (knead until it does not stick on your hand anymore).
Step 3: Use wood pestle to spread thinly.
Step 4: Before cutting, apple a little tapioca starch on knife edge for cutting easily. Cut into long and small pieces.
Step 5: Clean well ginger, smash well and mix with white wine. Clean well duck meat in 2 – 3 times. Chop into short pieces. Spread mixture ginger + white wine on duck skin and wait about 20 minutes and then clean well again. Wait to get dry.
